"Pecorino's cream"

INGREDIENTS: 230 gr. di pecorino primintio
1 egg hard
30/35 gr. of basil
100 ml of extra virgin olive oil

PREPARATION: Boil the egg. Wash the basil leaves. Remove the rind and cut the cheese into small pieces.
Putting it all in the mix, add a little extra virgin olive oil, a pinch of pepper and mix, if you see that the dough fails to become more homogenous and creamy add some oil and even a few tablespoons of water helps to give creamy dough.
Put in refrigerator and serve with croutons and raw vegetables.
You can also freeze it remains perfect.
