"Roulade of smoked provola"

INGREDIENTS: (for 4 persons)
12 slices of smoked provola
300 gr. of Jocca cheese
100 gr. of Prague ham
1 bunch arugula
1 bunch chives
3 tablespoons olive oil
1 tablespoon white wine vinegar
salt
pepper

PREPARATION: Defatted ham and cut it into cubes.
Wash and dry the arugula and chop coarsely.
Drain the Jocca cheese and mix in a bowl with oil, vinegar, 1 pinch of salt and pepper, add the ham, rocket and a little chopped chives.
Put 2 tablespoons of mixture on each slice of provola and roll it, bind it with a stalk of chives closed by knots, then serve.
